And it&#8217;s free! Dandelions are one of the first plants to grow after winter and most people view them as a nuisance. That is just ignorance. The whole thing is edible. It&#8217;s a superfood and it&#8217;s delicious.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">A Long History on the Table and in the Medicine cabinet<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">We have been eating dandelions and used them medicinally for thousands of years across Europe, Asia and the Americas. In Europe, the young leaves were a staple spring green that came in handy when all other fresh vegetables were scarce. Not sure about other places but in France, it&#8217;s still very common to eat them in salad. But aside from its culinary use, the humble dandelion has long been valued for its medicinal properties: diuretic, anti-oxydant, digestive and cholagogic (aka liver support). Studies have confirmed these properties and suggest that they are due to the plant&#8217;s high content in vitamins A, C, and K, as well as potassium, iron, and antioxidants. Of course, It won&#8217;t cure all but it&#8217;s a great addition to your diet and it&#8217;s an extremely safe plant to consume.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">When and How to Harvest Dandelions?<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">The young leaves that emerge in early spring (before the plant flowers) are the most tender. Once the flowers appear, the leaves are still edible  but they are way more bitter and fibrous. So the best time to harvest the leaves is from early spring through to mid-spring. But since the whole plant is edible, including the root, you can harvest the rest pretty much anytime. Just make sure to avoid roadsides or areas that have been treated with pesticides\/herbicides as well as places that might be contaminated by a lot of animal droppings. To clean your harvest, fill a large bowl with cold water and submerge the leaves. Swish them around to loosen any soil or insects, then lift them out and rinse with fresh water. Pat dry or spin in a salad spinner.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"700\" height=\"350\" src=\"https:\/\/www.thealblog.com\/wp-content\/uploads\/2026\/04\/dandalion-greens.jpg\" alt=\"\" class=\"wp-image-440\" srcset=\"https:\/\/www.thealblog.com\/wp-content\/uploads\/2026\/04\/dandalion-greens.jpg 700w, https:\/\/www.thealblog.com\/wp-content\/uploads\/2026\/04\/dandalion-greens-300x150.jpg 300w\" sizes=\"auto, (max-width: 700px) 100vw, 700px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">How to eat dandelions?<\/h2>\n\n\n\n<h6 class=\"wp-block-heading\">Dandelion salad:<\/h6>\n\n\n\n<p class=\"wp-block-paragraph\"> Definitely the easiest place to start. I f you&#8217;ve ever nibbled a dandelion leaf on its own and found it extremely bitter and unpleasant, you were not imagining things. The bitter stuff is exactly what makes dandelions healthy. But don&#8217;t worry; the second you dress the greens  with a vinaigrette, the bitterness recedes and a very pleasant flavor appears. The key is to use something acidic like vinegar or lemon juice.<\/p>\n\n\n\n<h6 class=\"wp-block-heading\">Spinach substitute:<\/h6>\n\n\n\n<p class=\"wp-block-paragraph\">You would not believe how many &#8220;weeds&#8221; can be cooked just like spinach. Dandelions happen to be one of them. You can blanch them, saut\u00e9 them, use them in pasta sauce, pestos, quiches, lasagna, stews, b\u00f6reks&#8230; The list goes on. And the cool thing about cooking your dandelions is that you can freeze them in portions and enjoy them any time of the year.<\/p>\n\n\n\n<h6 class=\"wp-block-heading\">Dandelion tea and coffee:<\/h6>\n\n\n\n<p class=\"wp-block-paragraph\">You can brew tea with the dried (and scrubbed) roots and petals of dandelions. If you have a little more patience, you can also roast  chopped dried roots in the oven until they are dark brown (about 160C for 40 minutes) and use that to make tea&#8230; except it will taste like coffee.<\/p>\n\n\n\n<h6 class=\"wp-block-heading\">Dandelion as a root vegetable:<\/h6>\n\n\n\n<p class=\"wp-block-paragraph\">Speaking of dandelion roots, if you are blessed with a lot of plump dandelion roots, you can cook them like carrots or any other root vegetable (roasted, fried, soup&#8230;). In my opinion it tastes a bit like parsnip or salsify.<\/p>\n\n\n\n<figure class=\"wp-block-image size-large\"><img loading=\"lazy\" decoding=\"async\" width=\"693\" height=\"1024\" src=\"https:\/\/www.thealblog.com\/wp-content\/uploads\/2026\/04\/dandelion-root-693x1024.jpg\" alt=\"dandelion root\" class=\"wp-image-441\" srcset=\"https:\/\/www.thealblog.com\/wp-content\/uploads\/2026\/04\/dandelion-root-693x1024.jpg 693w, https:\/\/www.thealblog.com\/wp-content\/uploads\/2026\/04\/dandelion-root-203x300.jpg 203w, https:\/\/www.thealblog.com\/wp-content\/uploads\/2026\/04\/dandelion-root.jpg 700w\" sizes=\"auto, (max-width: 693px) 100vw, 693px\" \/><\/figure>\n\n\n\n<h6 class=\"wp-block-heading\">Capers:<\/h6>\n\n\n\n<p class=\"wp-block-paragraph\">If the timing is right and you find young flower buds, you can pickle them and use them just like capers. You will find them neatly packed at the center of the plant. They should be small, still closed and with no visible stem.<\/p>\n\n\n\n<h6 class=\"wp-block-heading\">Dandelion honey:<\/h6>\n\n\n\n<p class=\"wp-block-paragraph\">It&#8217;s called honey, but it&#8217;s actually syrup made by simmering flower petals with water, sugar, and lemon. It can be used as a sweetener, even in drinks and will bring a nice floral flavor.<\/p>\n\n\n\n<h6 class=\"wp-block-heading\">Dandelion wine:<\/h6>\n\n\n\n<p class=\"wp-block-paragraph\">This one requires A LOT of patience and I have tasted it just once in my life. I never tried making it but now that I have enough space, I might because it&#8217;s delicious. You&#8217;re supposed to use the yellow petals only to avoid any bitterness and you need to put them in boiling water then let them steep for 3 days. Next add sugar, citrus and wine yeast and let it ferment for a few weeks. And after that you have to bottle the wine and let it age. <\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"700\" height=\"869\" src=\"https:\/\/www.thealblog.com\/wp-content\/uploads\/2026\/04\/dried-dandelion.jpg\" alt=\"dandelion\" class=\"wp-image-442\" srcset=\"https:\/\/www.thealblog.com\/wp-content\/uploads\/2026\/04\/dried-dandelion.jpg 700w, https:\/\/www.thealblog.com\/wp-content\/uploads\/2026\/04\/dried-dandelion-242x300.jpg 242w\" sizes=\"auto, (max-width: 700px) 100vw, 700px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Not just food<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Because dandelion is so rich in antioxydants and vitamins, it makes a great candidate for skincare products. I&#8217;m actually surprised it&#8217;s not used more given it grows everywhere. Now usually, due to hygiene reasons, I&#8217;m against homemade skincare, except when it comes to 2 things: face oils and toners. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">To make dandelion oil: Fill a clean jar halfway with DRIED petals. It&#8217;s very important that the petals are perfectly dry or your mixture will grow mold. fill the jar with an oil that is compatible with your skin type, cover with a breathable cloth and let sit in a warm sunny spot for 2-4 weeks. Strain into a clean bottle and store in a cool dark place once you start using it. You can also add a few drops of vitamin E to extend the shelf life. <\/p>\n\n\n\n<p class=\"wp-block-paragraph\">To make a toner, you&#8217;re basically going to make a tea using distilled water. You can also add other ingredients like green tea, aloe vera, rose water but keep in mind that homemade toners are not shelf stable at all so it&#8217;s best to prepare small amounts regularly and store it in the fridge<\/p>\n","protected":false},"excerpt":{"rendered":"<p>That &#8220;weed&#8221; in your garden is one of nature&#8217;s greatest gifts.
