Yes, you read that right. Sweet potato AND black bean brownie. Most of the time, healthy brownie recipes tell you to use one or the other but why choose between fiber from sweet potatoes and protein from beans when you can have both?
Full disclosure: for the last month, I’ve been trying to avoid sugar and artificial sweeteners. Not completely since I don’t eat that much to start with, but I wanted to see if it made me feel any different. Now, I may not have much of a sweet tooth but I do get the occasional sugar craving. I made this brownie for the first time during one but the thing is, I didn’t really measure anything that day. It turned out so good that I had to make one again and this time, I wrote everything down.

So, the brownie is vegan and the only sugar it contains is from the dark chocolate. The sweetness comes from the combination of sweet potato and date syrup but since the recipe is very forgiving, you can easily substitute it with maple or agave syrup and adjust the amount depending on how sweet you want it to be. As for the amounts of beans and sweet potato, they’re also quite flexible. The result is ultra fudgy regardless!
Ingredients:
- 400g cooked sweet potato
- 230g cooked black beans
- 200g date syrup
- 125g all-purpose flour
- 100g dark chocolate
- 1tbsp. cocoa powder
- 1tbsp. coconut oil
- 1tsp. baking powder
- Vanilla extract
- Chopped hazelnuts or pecans (optional)
Instructions:
Preheat your oven to 180C. In a large bowl, combine the sweet potato and beans with a potato masher until smooth. Add all the other ingredients except the chocolate and nuts and mix well. Alternatively, you can use a food processor. Melt the chocolate (in the microwave or on the hob) and add to the brownie mixture. Spread the mix in a baking pan lined with parchment paper, sprinkle with chopped nuts if you like and bake for 15 to 20 minutes. Wait until the brownie has cooled down before slicing.

Chances are, you will finish this sweet potato and black bean brownie very fast but, if you don’t, make sure to store it in the fridge, in an air tight container.
